French Onion Beef and Pasta Casserole

  1. 1 Preheat oven to 350°F (175°C). In a large skillet, heat olive oil over medium heat. Add the sliced onions and cook for about 10–12 minutes, stirring occasionally, until caramelized and golden brown.
  2. 2 Add the minced garlic to the skillet and cook for an additional 1–2 minutes until fragrant.
  3. 3 In a separate pot, cook the egg noodles according to package instructions until al dente. Drain and set aside.
  4. 4 In the skillet with the onions, add the ground beef and cook until browned, breaking it apart with a spoon. Drain excess fat if necessary.
  5. 5 Stir in the beef broth, heavy cream, dried thyme, salt, and pepper. Bring the mixture to a simmer and cook for about 5 minutes.
  6. 6 Combine the cooked egg noodles with the beef and onion mixture, stirring to mix well.
  7. 7 Transfer the mixture to a greased 9×13 inch baking dish. Top with shredded Swiss cheese.
  8. 8 Bake in the preheated oven for 25–30 minutes, or until the cheese is melted and bubbly. Remove from oven and cool slightly.
  9. 9 Garnish with fresh parsley before serving.
