Always ensure the sauce reaches a safe hot temperature (steaming and bubbling around the edges) before serving, and refrigerate leftovers within 2 hours in shallow containers. Reheat gently on the stovetop or in the microwave with a splash of broth or cream to loosen the sauce, and discard any leftovers that have been left at room temperature too long or show signs of spoilage.
