1. Cook the Bacon
In a large skillet over medium heat, cook chopped bacon until crispy. Remove and place on a paper towel to drain. Leave about 1 tablespoon of bacon fat in the pan.
2. Sauté Beef and Onion
Add the ground beef and diced onions to the skillet with the reserved bacon fat. Sauté until the beef is fully browned and onions are soft (about 7–8 minutes). Drain excess fat if needed.

3. Season the Meat
Add garlic, ketchup, mustard, Worcestershire (if using), salt, and pepper. Stir well and cook for another 2 minutes. Remove from heat. Stir in cooked bacon and pickles if using. Let mixture cool for 10 minutes before assembling.
4. Preheat Oven
Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper or spray with nonstick spray.
5. Roll Out the Dough
Unroll the pizza or crescent dough on a lightly floured surface into a large rectangle (about 10×14 inches). If using crescent rolls, pinch seams together to seal.
6. Add Filling
Sprinkle cheese evenly over the dough, leaving a ½-inch border on all sides. Spoon the cooled meat mixture on top of the cheese.
7. Roll and Slice
Starting from the long edge, tightly roll the dough into a log. Slice into 1 ½-inch sections using a sharp knife or unflavored dental floss.
8. Bake
Place rollups spiral-side up on the baking sheet, spacing them slightly apart. Bake for 18–20 minutes, or until golden brown.
9. Make Garlic Butter
While the rollups are baking, mix melted butter, minced garlic, parsley, and a pinch of salt in a small bowl.
10. Brush and Serve
Once rollups are out of the oven, immediately brush them with garlic butter. Let cool for 5 minutes before serving.
