Sweet-Heat Chicken Griddle Melts
A quick and satisfying grilled sandwich with sweet and spicy BBQ chicken and melty cheese. Perfect for using up leftover chicken on a busy weeknight!
Ingredients:
2 cups cooked chicken, shredded or diced (rotisserie works great)
½ cup BBQ sauce (sweet or spicy)
4 slices of cheese (cheddar or pepper jack)
8 slices of bread (any kind)
Butter, for grilling
Optional: sliced jalapeños for extra heat
Instructions:
1. In a small bowl, mix the shredded chicken and BBQ sauce until well combined.
2. Heat a large skillet or griddle over medium heat.
3. Butter one side of each slice of bread.
4. Place 4 slices of bread in the skillet, butter side down.
5. Top each with the BBQ chicken mixture, a slice of cheese, and optional jalapeños if desired.
6. Place the remaining 4 slices of bread on top, butter side up.
7. Grill for 3-4 minutes until golden brown, then carefully flip and grill the other side for another 2-3 minutes until the cheese is melted and the sandwich is heated through.
8. Serve hot with chips or a simple salad.
