Soft Milk Sponge Cake

  • 6 large eggs, separated
  • 1 cup (200g) granulated sugar, divided
  • 1/2 cup (120ml) whole milk
  • 1/4 cup (60ml) vegetable oil (or melted unsalted butter)
  • 1 teaspoon vanilla extract
  • 1 cup (120g) cake flour, sifted
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 teaspoon cream of tartar (optional, for stabilizing egg whites)
