Savory Spinach and Oat Protein Breakfast Muffins

1. Prep

Preheat oven to 180°C (350°F)

Line or grease a 12-cup muffin tin

2. Mix Wet Ingredients

In a bowl, whisk together eggs and cottage cheese

Fold in chopped spinach and shredded cheese

3. Combine Dry Ingredients

In another bowl, mix oat flour, rolled oats, baking powder, salt, pepper, and garlic powder

Add optional herbs or veggies

4. Combine

Fold dry ingredients into wet mixture until just combined

5. Bake

Spoon batter into muffin tin, filling ~3/4 full

Bake 20–25 minutes until set and lightly golden

Let cool slightly before removing
