No Sugar No Flour Carrot Cake – A Deliciously Healthy Treat!
This moist and flavorful carrot cake is sweetened naturally and made without any flour, making it a perfect guilt-free dessert option.
Ingredients (serves 8):
2 cups grated carrots
1 cup almond flour
1/2 cup unsweetened applesauce
1/4 cup honey or maple syrup (optional for added sweetness)
3 large eggs
1 tsp baking soda
1 tsp baking powder
1 tsp cinnamon
1/2 tsp nutmeg
1/4 tsp salt
1/2 cup chopped walnuts or pecans (optional)
1/2 cup raisins (optional)
Instructions:
Step 1: Preheat the Oven
Preheat your oven to 350°F (175°C) and grease a 9-inch round cake pan.
Step 2: Mix the Wet Ingredients
In a large bowl, combine the grated carrots, almond flour, applesauce, honey or maple syrup (if using), and eggs. Mix well until all ingredients are fully incorporated.
Step 3: Add the Dry Ingredients
In a separate bowl, whisk together the baking soda, baking powder, cinnamon, nutmeg, and salt. Gradually add this mixture to the wet ingredients, stirring until just combined. Fold in the walnuts and raisins if desired.
