Mediterranean Baked Fish Bliss

Preheat your oven to 400°F (200°C). A well-preheated oven is essential for baking fish evenly and helping it retain moisture.

Step 2: Prepare the Marinade

In a small mixing bowl, combine:

  • ¼ cup olive oil

  • 1 tablespoon lemon juice

  • 1 teaspoon lemon zest

  • 2 minced garlic cloves

  • 1 teaspoon dried oregano

  • ½ teaspoon thyme

  • ½ teaspoon paprika

  • ½ teaspoon salt

  • ¼ teaspoon black pepper

Whisk everything together until the oil and lemon emulsify into a bright, aromatic marinade.

Step 3: Season the Fish

Place the fish fillets in a lightly greased or parchment-lined baking dish. Pour the marinade over the fillets, using a spoon or brush to make sure each piece is fully coated.

Step 4: Add the Vegetables

Scatter the halved cherry tomatoes, olives, and red onion slices over and around the fish. This not only adds flavor but also provides a colorful, fresh presentation.

Step 5: Bake

Transfer the dish to the oven. Bake uncovered for 15–18 minutes, depending on the thickness of your fillets. The fish is done when it flakes easily with a fork and appears opaque all the way through.

Step 6: Garnish and Serve

Remove the dish from the oven. Sprinkle the top with fresh parsley, and serve each portion with lemon wedges on the side for an extra zing.
