-
Peel onions and slice them into ½-inch thick rings.
-
Separate the layers, choosing the largest rings for stuffing (each stuffed ring will need two matching sizes — one for the top and one for the bottom).
Pro Tip: Save the smaller inner onion pieces for another recipe, like stir-fries or soups.
Step 2: Cook the Beef
-
In a skillet over medium heat, cook ground beef until about halfway browned.
-
Add salt, pepper, garlic powder, onion powder, and paprika. Stir well.
-
Continue cooking until fully browned, then drain any excess grease.
Step 3: Add the Bacon & Cheese
-
While the beef is still warm, stir in crumbled bacon.
-
Add shredded cheddar cheese and mix until melted and combined.
Step 4: Assemble the Loaded Onion Rings
-
Lay one onion ring flat on a baking tray.
-
Spoon the beef-bacon-cheese mixture inside, pressing gently so it’s packed.
-
Place a matching onion ring of the same size on top to “seal” it.
-
Repeat until all filling is used.
Step 5: Coat the Onion Rings
-
Dredge each stuffed onion ring in flour (shaking off excess).
-
Dip into beaten eggs, coating fully.
-
Roll in seasoned panko breadcrumbs, pressing gently so crumbs stick.
-
For extra crunch, you can double coat by dipping back in egg and panko.
Step 6: Fry the Onion Rings
-
Heat oil in a deep pan or fryer to 350°F (175°C).
-
Fry onion rings in batches for about 2–3 minutes per side or until golden brown.
-
Remove and drain on a wire rack or paper towel.
Step 7: Serve & Enjoy
-
Serve hot with your favorite dipping sauce — burger sauce, ranch, or a spicy mayo work perfectly.
-
Sprinkle with parsley for a pop of color.
