Chocolate Mud Bars

Chocolate Mud Bar Base

  • 200g dark chocolate
  • 180g butter
  • 200g sugar
  • 3 large eggs
  • 1 tsp vanilla extract
  • 150g all-purpose flour
  • 40g cocoa powder
  • 1/2 tsp salt

Chocolate Frosting / Ganache

  • 200g chocolate
  • 150ml heavy cream
  • Optional: 1 tbsp butter for shine

Optional Toppings

  • Chocolate chips
  • Crushed cookies
  • Chocolate curls
  • Sea salt flakes

Instructions

1. Prepare the Batter

  1. Preheat oven to 175°C.
  2. Line a square baking pan with parchment paper.
  3. Melt chocolate and butter together until smooth.
  4. Whisk in sugar.
  5. Add eggs one at a time, then vanilla extract.
  6. Fold in flour, cocoa powder, and salt.
  7. Mix until just combined.

2. Bake

  1. Pour batter into prepared pan.
  2. Spread evenly.
  3. Bake for 30–35 minutes.
  4. Center should remain slightly soft for a fudgy texture.
  5. Let cool completely.

3. Make the Ganache

  1. Heat cream until hot but not boiling.
  2. Pour over chopped chocolate.
  3. Let sit 2 minutes, then stir until glossy.
  4. Add butter if desired.

4. Assemble

  1. Spread ganache over cooled bars.
  2. Add toppings if desired.
  3. Chill briefly for cleaner slicing.

5. Slice and Serve

  1. Cut into squares using a warm knife.
  2. Serve at room temperature or chilled.
