Blueberry Greek Yogurt Bites

1. Prepare the blueberry swirl base

In a small bowl, combine the Greek yogurt, honey, and vanilla extract. Stir until smooth and the honey is fully incorporated. Taste and adjust sweetness if needed.

2. Gently fold in the blueberries

Add the fresh or frozen blueberries to the yogurt mixture. Stir carefully with a spatula. If using frozen berries, they will release a little purple juice as you stir—that is perfect, as it creates a natural swirl effect. Do not overmix; you want ribbons of blueberry, not uniform purple.

3. Fill the molds

Spoon the yogurt-blueberry mixture into your silicone mold, filling each cavity to the top. Tap the mold gently on the counter to settle the mixture and remove air pockets. For a cleaner look, scrape a knife across the top to level each bite.

4. Add optional toppings

If desired, sprinkle a pinch of freeze-dried blueberry powder or graham cracker crumbs over each bite before freezing. The freeze-dried berry adds tartness; graham adds a crust-like texture.

5. Freeze until solid

Place the mold on a flat surface in your freezer. Freeze for at least 2 hours, or up to overnight. The bites must be completely firm to pop out cleanly.

6. Release the bites

Remove the mold from the freezer. If using a silicone mold, simply push up from the bottom of each cavity to release the frozen bites. For a plastic ice cube tray, let it sit at room temperature for 1 minute, then twist and tap upside down.

7. (Optional) White chocolate drizzle

Melt 2 tablespoons of white chocolate chips in a microwave (15-second bursts, stirring in between) or over a double boiler. Drizzle over the frozen bites using a fork. The chocolate will set within 1 minute in the cold temperature.

  • Store in an airtight container or zip-top bag in the freezer for up to 2 months. Place parchment paper between layers to prevent sticking.

  • Serve straight from the freezer. Let them sit at room temperature for 2–3 minutes for a softer, creamier texture.

  • Not recommended for refrigeration, as they will become runny.
