Preheat your oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish with butter or non-stick cooking spray.
Step 2: Cook the Ground Beef
Heat the olive oil in a large skillet over medium heat. Add the diced onion and cook for 3–4 minutes until softened.
Stir in the minced garlic and cook for another 30 seconds until fragrant.

Add the ground beef and cook for 6–8 minutes, breaking it apart with a spoon until browned. Drain any excess grease.
Season with salt, black pepper, paprika, and Italian seasoning, stirring well to coat the meat evenly.
Step 3: Prepare the Creamy Sauce
In a medium bowl, whisk together the cream of mushroom soup, milk, and sour cream until smooth and creamy.
Step 4: Assemble the Casserole
Arrange half of the sliced potatoes in an even layer in the prepared baking dish.
Spread half of the cooked ground beef mixture over the potatoes.
Pour half of the creamy sauce over the beef and sprinkle with 1 cup of cheddar cheese.
Repeat the layers with the remaining potatoes, beef, sauce, and finish with the remaining cheddar cheese and all of the mozzarella cheese on top.
Step 5: Bake
Cover the dish tightly with aluminum foil and bake for 50 minutes.
Remove the foil and continue baking for 20–25 minutes, or until the potatoes are fork-tender and the cheese is melted, bubbly, and golden brown.
If you prefer a crispier top, broil for the last 2–3 minutes, watching closely.
Step 6: Rest and Serve
Remove the casserole from the oven and let it rest for 10 minutes before slicing. This helps the layers set and makes serving easier.
Garnish with chopped fresh parsley and serve hot.
