Zero Point Cucumber Recipe

The first thing you need to do is wash your cucumbers very thoroughly under cold running water to remove any dirt or wax from the skin. You can choose to peel the cucumbers if you prefer a softer texture but keeping the skin on provides more fiber and a better crunch for the final result. Once they are clean take a sharp knife or a mandoline slicer and cut the cucumbers into very thin rounds or long ribbons depending on your visual preference. Place all of your sliced cucumbers into a large glass mixing bowl and sprinkle the sea salt over the top of them evenly. Let the cucumbers sit with the salt for about five minutes because this process helps draw out excess water which makes the final dish even more crisp.

After the five minutes have passed you can drain away any liquid that has pooled at the bottom of the bowl if you want a more concentrated flavor. Now it is time to add your liquid ingredients so pour the vinegar and the fresh lemon juice directly over the cucumber slices. Use a large spoon or your clean hands to toss the cucumbers so every single piece is coated in that acidic and bright liquid base. Next you will sprinkle in your dry seasonings including the garlic powder and onion powder and the dried dill to add that classic herbal aroma. If you enjoy a bit of spice now is the time to add the crushed red pepper flakes which will give the dish a beautiful pop of color and a warm finish.

Give everything one final toss to ensure the spices are distributed perfectly and not clumped together in one spot of the bowl. You can eat these immediately if you are in a rush but the flavor actually gets much better if you let the bowl sit in the fridge for twenty minutes. This resting time allows the vinegar to slightly pickle the cucumbers and helps the spices penetrate deep into the vegetable slices for a more intense taste. When you are ready to serve just give them a quick stir and portion them out into small bowls or eat them straight from the main container. This is a very forgiving recipe so do not worry about being perfectly precise with your measurements as you can always add more of what you like as you go along.
