Turkey Pepper Cottage Cheese Rice Skillet Bake

Ingredients:
• 1 pound ground turkey
• 1 tablespoon olive oil
• 1 red bell pepper, diced
• 1 green bell pepper, diced
• 1 small onion, diced
• 2 cups cooked rice
• 3/4 cup cottage cheese
• 1/2 cup shredded mozzarella
• 1 teaspoon paprika
• 1/2 teaspoon black pepper
• 1/2 teaspoon salt
• 2 tablespoons chopped parsley

Methods:

Heat oven to 375 F and lightly grease a medium baking dish.
Heat the olive oil in a skillet over medium high heat and cook the ground turkey until browned and fully cooked, breaking it apart as it cooks.
Add the peppers and onion and cook for 5 to 6 minutes until softened and glossy with a little color around the edges.
Stir in the paprika, black pepper, and salt so the meat and vegetables are fully coated in flavor.
Add the cooked rice and cottage cheese and stir until everything turns creamy and well combined.
Transfer the mixture to the baking dish, top with mozzarella, and bake for 12 to 15 minutes until hot and bubbling.
Finish with parsley and serve warm. The peppers stay sweet and tender while the cheesy rice and turkey bake into pure comfort.
