The Best Shakshuka
You will need:
• 2 eggs
• 1 cup tomatoes, chopped
• 1/2 bell pepper, sliced
• 1/4 onion, diced
• 1 clove garlic, minced
• 1 teaspoon olive oil
• 1/4 teaspoon paprika
• 1/4 teaspoon cumin
• Salt and pepper to taste
• Fresh parsley for garnish
Instructions:
1. Sauté the veggies: Heat olive oil in a skillet. Cook onions, bell pepper, and garlic until soft.
2. Add spices and tomatoes: Stir in paprika, cumin, and tomatoes. Simmer for 10 minutes until thickened.
3. Cook the eggs: Make two wells in the sauce and crack eggs into them. Cover and cook on low until whites set but yolks are runny.
4. Serve: Garnish with parsley and enjoy with crusty bread.
