Strawberry Cottage Cheese Protein Loaf

Ingredients (makes about 10 slices):
2 cups cottage cheese
1 cup rolled oats
2 large eggs
1 cup fresh strawberries, pureed
1/4 cup honey
1 tsp vanilla extract
1 tsp baking powder
1/4 cup protein powder
Step 1: Preheat & Prepare
Preheat oven to 350°F (175°C). Line a loaf pan with parchment paper or grease lightly.
Step 2: Blend Wet Ingredients
In a blender or food processor, combine cottage cheese, eggs, pureed strawberries, honey, and vanilla extract. Blend until smooth.
Step 3: Mix in Dry Ingredients
Add rolled oats, protein powder, and baking powder to the wet mixture. Stir or pulse until fully combined into a thick batter.
Step 4: Bake
Pour batter into the prepared loaf pan. Bake for 35-40 minutes, or until a toothpick inserted comes out clean and top is golden.
