The first step is to prepare your strawberries by washing them under cold water and removing the green leafy tops with a small knife. You should then slice the strawberries into small pieces or you can even mash them with a fork if you want the fruit flavor to be more integrated into the liquid base. If you prefer a very smooth pudding you can put the strawberries and the milk into a blender and pulse them for a few seconds until the liquid turns a beautiful pink color.
Next you will take a medium sized glass jar or a bowl and pour in your chosen milk along with the vanilla extract and the maple syrup. Add the scoop of protein powder to this liquid and use a small whisk or a fork to mix it very well until there are no clumps of powder left floating on the top. It is important to make sure the protein powder is fully dissolved so that the texture of your pudding remains smooth and pleasant to eat later on.
Once the liquid base is ready you will add the three tablespoons of chia seeds into the mixture and stir them in very thoroughly. You need to stir for at least one full minute to ensure that the seeds are spread out evenly and are not sticking together in large clumps at the bottom of the jar. After the first minute of stirring let the jar sit on the counter for about five minutes and then give it another good stir because this prevents the seeds from settling and ensures a uniform thickness throughout.

Now you can fold in your chopped strawberries or the mashed fruit that you prepared earlier so that they are distributed through the pudding. If you are using the Greek yogurt you should add it now and stir gently to create a swirled effect or mix it completely for a much thicker and richer consistency. Cover the jar with a lid or use some plastic wrap to seal it tightly so that no other smells from the fridge can get into your delicious creation.
Place the jar in the refrigerator and let it sit for a minimum of four hours though leaving it overnight is much better for the best results. During this time the chia seeds will expand and absorb the liquid which transforms the mixture from a thin drink into a thick and spoonable pudding. When you are ready to eat it just take it out of the fridge and give it one last stir to fluff it up and check the consistency.
If the pudding feels too thick for your liking you can add a tiny splash of extra milk and stir it until it reaches your perfect level of creaminess. Top the pudding with some fresh strawberry slices or maybe a few nuts for crunch and enjoy your healthy meal immediately while it is still cold.
