Strawberry Banana Cottage Cheese Crumble Breakfast Bars
These breakfast bars are soft, fruity, and packed with the kind of cozy homemade flavor that makes mornings feel a little easier. The strawberries turn juicy, the banana keeps every bite tender, and that buttery crumble on top makes them look as good as they taste.
Ingredients:
β’ 1 cup cottage cheese
β’ 1 ripe banana
β’ 2 large eggs
β’ 1/4 cup honey
β’ 1 teaspoon vanilla extract
β’ 1 cup rolled oats
β’ 3/4 cup all purpose flour
β’ 1 teaspoon baking powder
β’ 1/4 teaspoon salt
β’ 3/4 cup diced strawberries
==========
β’ 1/3 cup flour
β’ 2 tablespoons brown sugar
β’ 2 tablespoons cold butter
Methods:
Heat oven to 350 F and line an 8 inch square pan with parchment paper so the bars lift out cleanly after baking.
Blend the cottage cheese, banana, eggs, honey, and vanilla until smooth and creamy.
In a bowl, mix the oats, flour, baking powder, and salt, then stir in the blended mixture just until a thick batter forms.
Fold in the diced strawberries gently so they stay bright and juicy in the bars.
In a small bowl, work the flour, brown sugar, and cold butter together with your fingertips until a crumbly topping forms.
Spread the batter into the pan, scatter the crumble over the top, and bake for 28 to 34 minutes until golden and set.
Cool before slicing. The bars stay soft and tender with sweet strawberry pockets in every piece.
