Sourdough Chocolate Sandwich Cookies

In a large mixing bowl, cream together butter, brown sugar, and granulated sugar until light and fluffy. This should take about 2–3 minutes using an electric mixer on medium speed.

Add the egg and vanilla extract, mixing until fully incorporated.

Stir in the sourdough discard until the mixture becomes smooth and slightly glossy.


Step 2: Mix Dry Ingredients

In a separate bowl, whisk together:

  • Flour
  • Cocoa powder
  • Baking soda
  • Baking powder
  • Salt

Slowly add the dry ingredients into the wet mixture.

Mix on low speed until a thick chocolate dough forms.

Fold in chocolate chips if using.


Step 3: Chill the Dough

Cover the dough and refrigerate for 30 minutes.

Chilling helps the dough firm up and prevents spreading during baking.


Step 4: Preheat the Oven

Preheat your oven to 350°F (175°C).

Line a baking sheet with parchment paper.

Using a cookie scoop or tablespoon, portion dough into even balls.

Place them on the baking sheet, leaving space between each cookie.

Gently flatten each ball slightly with your palm.

Cookies should look set around the edges but slightly soft in the center.

Do not overbake to maintain a chewy texture.

Transfer to a wire rack and cool completely before filling.

Add vanilla extract, salt, and heavy cream.

Beat until light, smooth, and pipeable.


Assembling the Sandwich Cookies


Step 9: Fill the Cookies

Pair cookies of similar size.

Spread or pipe filling onto the flat side of one cookie.

Gently press another cookie on top to form a sandwich.


Step 10: Set the Cookies

Let assembled cookies rest for 10–15 minutes so the filling sets slightly.
