  1. Start by washing your potatoes under cold water to remove any dirt or debris from the skins. Place the whole potatoes in a large pot and cover them with water then add a pinch of salt and bring the water to a boil.

  2. Cook the potatoes until they are very soft when poked with a fork which usually takes about 20 to 25 minutes depending on the size of the potatoes. Once they are done drain the water and let them cool down just enough so you can peel the skin off without burning your fingers.

  3. In a large mixing bowl mash the peeled potatoes until they are completely smooth with no lumps left behind.   10. Place a spoonful of the meat filling in the center of the potato disk. Carefully fold the edges of the potato dough over the meat and pinch them together to seal the filling inside.

  11. Roll the ball between your hands to create a smooth oval or cylindrical shape. Repeat this process until all your dough and filling are used up.

  12. If you want a crunchy crust you can roll each potato cylinder in a bowl of breadcrumbs until it is evenly coated on all sides.

  13. Heat about two inches of vegetable oil in a deep pan over medium high heat. To test if the oil is ready drop a tiny piece of dough in and if it sizzles immediately the oil is perfect.

  14. Carefully place a few rolls into the hot oil but do not crowd the pan as this will lower the temperature of the oil. Fry the rolls for about 3 to 4 minutes per side or until they are a beautiful golden brown color.

  15. Use a slotted spoon to remove the rolls from the oil and place them on a plate lined with paper towels to soak up any extra grease.

  16. Let the rolls sit for a couple of minutes before serving because the inside will be very hot. Serve them warm with your favorite sauce and enjoy your hard work.
