Ingredients:
1 lb ground beef
3 large Russet potatoes, peeled and cubed small
1 small onion, diced
2 cloves garlic, minced
2 cups shredded sharp cheddar cheese
1 tsp paprika
1/2 tsp garlic powder
Salt and black pepper to taste
2 tbsp olive oil (for the potatoes)
Green onions for garnish
Instructions:
The Potatoes: In a large skillet over medium-high heat, add the oil and cubed potatoes. Season with salt and pepper. Cover and cook for 10–12 minutes, stirring occasionally, until the potatoes are tender and golden-brown. Remove and set aside.
The Beef: In the same skillet, brown the ground beef with the diced onion until the beef is cooked through. Drain any excess grease.
The Flavor: Stir in the minced garlic, paprika, and garlic powder. Cook for 1 minute until fragrant.
The Mix: Return the crispy potatoes to the skillet. Toss everything together until the flavors are well combined and heated through.
The Melt: Top the mixture with a generous layer of shredded cheddar. Cover with a lid for 2 minutes until the cheese is bubbling and molten.
Serve:
Garnish with fresh green onions and serve warm directly from the skillet.
