Ingredients
1 head iceberg lettuce, chopped
1/2 red onion, finely chopped
4-5 hard boiled eggs, chopped
5 sweet peppers, diced
2 (12 oz) bags frozen peas, thawed
1 ½ cups aged Irish cheese, shredded or diced
Dressing
3/4 cup mayo
1/2 cup sweet relish
1 tablespoon spicy mustard
1 teaspoon dried thyme
2 teaspoons salt
Preparation
In a small bowl, combine all dressing ingredients and mix until smooth.
In a large glass bowl or trifle dish, layer ingredients in the following order: lettuce, red onion, hardboiled eggs, peppers, peas, and cheese.
Pour dressing over the salad and spread across the top.
Wait to toss salad until ready to serve (to show off those layers!).
