Preparing Your Workspace
The first thing you want to do is clear a clean space on your kitchen counter so that you have plenty of room to work with your ingredients. Take your low carb tortilla and lay it flat on a plate or a cutting board so that it is easy to fill without any of the toppings falling out the sides. You want to make sure the tortilla is at room temperature because cold tortillas can sometimes crack when you try to roll them up into a tight shape. If your tortillas are coming straight from the fridge you can warm them in the microwave for five or ten seconds to make them soft and flexible.
Layering the Flavors
Once your tortilla is ready and soft you can start by laying down the pepperoni slices in a single layer in the middle of the wrap. You should aim to place about six slices of pepperoni per wrap but you can add more if you really love the taste of spicy meat. After the pepperoni is in place you will put your mozzarella cheese stick right on top of the meat. If you are using shredded cheese instead of a stick simply sprinkle the cheese in a thick line down the center of the pepperoni layer. The cheese acts as the glue that holds everything together once it melts so do not be afraid to use a generous amount.
Rolling the Wrap
Now comes the part where you roll the wrap into a tight cylinder shape similar to a small burrito or a spring roll. Fold the sides of the tortilla inward first so that the cheese and pepperoni cannot leak out of the ends while they are cooking in the air fryer. Once the sides are folded over you can start rolling from the bottom up until the entire thing is a neat and tidy package. Make sure the seam of the wrap is facing down on your plate so that it stays closed while you prepare the next one. Repeat this exact process for the second wrap so that you have two beautiful rolls ready for the air fryer.

Adding the Topping
In a small bowl mix your melted butter with the Italian seasoning and the garlic powder and the sea salt until it is well combined. Use a pastry brush or a small spoon to spread this butter mixture over the top and the sides of each wrap. This step is very important because the butter helps the tortilla turn a beautiful golden brown color and adds a huge amount of flavor to every bite. The garlic and herbs will toast in the air fryer and create a smell that is absolutely irresistible to anyone in your house.
The Air Frying Process
Place your prepared wraps into the basket of your air fryer with the seam side facing down to ensure they do not pop open. You do not need to pre heat most air fryers for this recipe but you can if you want a slightly faster cooking time. Set the temperature of your air fryer to 375 degrees Fahrenheit or 190 degrees Celsius for the best results. Let the wraps cook for about five to seven minutes in total but you should check them halfway through to see how they are doing. Every air fryer is a little bit different so you want to keep an eye on them to make sure they do not get too dark or burn.
Flipping and Finishing
At the three minute mark you can use a pair of tongs to gently flip the wraps over so that the bottom side gets just as crispy as the top. This ensures a uniform crunch all the way around the wrap which is the best part of the eating experience. Once the time is up and the wraps are a deep golden brown you can carefully remove them from the air fryer basket. They will be very hot so let them sit on a plate for two or three minutes before you try to cut into them or take a bite. This resting time also allows the cheese inside to set slightly so it does not all run out the moment you take a bite.
