Keto Crustless Mushroom Spinach Pie

Preheat your oven to 375°F (190°C). Lightly grease a 9-inch pie dish with cooking spray or olive oil.

Step 2: Cook the Vegetables

Heat the olive oil in a large skillet over medium heat.

Add the diced onion and sauté for about 3 to 4 minutes until softened. Stir in the garlic and cook for another 30 seconds until fragrant.

Add the sliced mushrooms and cook for 6 to 8 minutes, stirring occasionally. The mushrooms will release moisture and begin to brown.

Add the fresh spinach and cook for 2 to 3 minutes until wilted. Remove the skillet from heat and allow the mixture to cool slightly.

Step 3: Prepare the Egg Mixture

In a large mixing bowl, whisk together:

  • Eggs
  • Heavy cream
  • Salt
  • Black pepper
  • Thyme
  • Paprika

Whisk until the mixture becomes smooth and fully combined.

Step 4: Add the Cheese

Stir the mozzarella cheese and Parmesan cheese into the egg mixture.

Mix well so the cheese is evenly distributed throughout the batter.

Step 5: Combine Everything

Add the cooked mushroom and spinach mixture to the bowl with the egg and cheese mixture.

Fold gently until all ingredients are evenly incorporated.

Step 6: Fill the Pie Dish

Pour the mixture into the prepared pie dish.

Use a spatula to spread everything evenly, ensuring the vegetables are distributed throughout the pie.
