Heat the olive oil in a large skillet over medium heat.

Add the fresh spinach and cook for 2 to 3 minutes until wilted. Remove the skillet from heat and allow the mixture to cool slightly.
Step 3: Prepare the Egg Mixture
In a large mixing bowl, whisk together:
- Eggs
- Heavy cream
- Salt
- Black pepper
- Thyme
- Paprika
Whisk until the mixture becomes smooth and fully combined.
Step 4: Add the Cheese
Stir the mozzarella cheese and Parmesan cheese into the egg mixture.
Mix well so the cheese is evenly distributed throughout the batter.
Step 5: Combine Everything
Add the cooked mushroom and spinach mixture to the bowl with the egg and cheese mixture.
Fold gently until all ingredients are evenly incorporated.
Step 6: Fill the Pie Dish
Pour the mixture into the prepared pie dish.
Use a spatula to spread everything evenly, ensuring the vegetables are distributed throughout the pie.
