Irresistible Flourless Apple Cinnamon Muffins 
– Soft, Cozy & Naturally Sweet
Ingredients:
2 medium apples, peeled and finely diced
2 large eggs
1 cup rolled oats (or oat flour)
½ cup Greek yogurt or cottage cheese
1–2 tbsp honey or maple syrup (optional)
1 tsp vanilla extract
1 tsp baking powder
½ tsp ground cinnamon
Pinch of salt
Directions:
Step 1: Get Ready
Preheat your oven to 350°F (175°C) and line or lightly grease a muffin tin.
Step 2: Make the Batter
In a blender or mixing bowl, combine the eggs, yogurt (or cottage cheese), oats, honey, vanilla extract, baking powder, cinnamon, and salt. Blend or mix until smooth, then gently stir in the diced apples.
Step 3: Bake
Spoon the batter into the muffin cups, filling each about ¾ full. Bake for 18–20 minutes, until the muffins are set and slightly golden on top.
Step 4: Cool & Enjoy
Allow the muffins to cool for a few minutes before removing. Serve warm or chilled — soft, cozy, and naturally sweet!
Tips:
Stir in chopped walnuts or pecans for a delicious crunch.
