A cozy, protein-packed bake that works for breakfast, snack, or dessert.
Ingredients:
• 1 cup cottage cheese
• 3 large eggs
• 1/3 cup maple syrup or honey (or sugar-free sweetener)
• 1/2 cup oat flour (or blended oats)
• 1/2 tsp baking powder
• 1 tsp vanilla extract
• 1 cup blueberries (fresh or frozen)
• Pinch of salt
Instructions:
Preheat oven to 350°F (175°C). Lightly grease a small baking dish.
In a blender, mix cottage cheese until smooth.
Add eggs, sweetener, and vanilla. Blend again until combined.
Add oat flour, baking powder, and salt. Blend until smooth.
Gently fold in blueberries.
Pour into the baking dish and spread evenly.
Bake for 35–40 minutes until set and lightly golden on top.
Let cool for 10 minutes before slicing.
