High-Protein Blueberry Lemon Cottage Cheese Cake 🍋🫐
A soft, fluffy cake with a fresh citrus twist.
Ingredients:
• 1 cup cottage cheese
• 3 large eggs
• 1/2 cup almond flour
• 1/3 cup blueberries (fresh or frozen)
• 2–3 tbsp honey or sugar-free sweetener
• 1 tbsp lemon juice
• 1 tsp lemon zest
• 1 tsp vanilla extract
• 1/2 tsp baking powder
• Pinch of salt
Instructions:
Preheat oven to 350°F (175°C). Grease or line a small cake pan.
Blend cottage cheese until smooth.
In a bowl, whisk eggs, cottage cheese, sweetener, lemon juice, zest, and vanilla.
Add almond flour, baking powder, and salt. Mix until combined.
Gently fold in blueberries.
Pour batter into the pan and smooth the top.
Bake for 30–35 minutes until set and lightly golden.
Let cool before slicing.
