Prepare the meat:
Wash the beef and tripe well.
In a pot, add them with water and bring to a boil.
Remove foam (impurities) from the surface.
Cook the base:
Add chopped onion and garlic.
Let it simmer on medium-low heat for about 45–60 minutes until meat is tender.
Add vegetables:
Add the cubed potatoes.
Season with salt, pepper, and paprika.
Continue cooking for another 20–25 minutes until potatoes are soft.
Finish the soup:
Drizzle a little oil for extra flavor (optional).
Taste and adjust seasoning.
