Healthy Cottage Cheese Oat Bread 🍞
A soft and wholesome gluten-free oat bread made with cottage cheese and simple pantry staples.
Ingredients
1 cup cottage cheese
3 large eggs
2 cups rolled oats
1/4 cup olive oil
1 tablespoon honey or maple syrup
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon Italian seasoning or cinnamon (optional depending on savory or sweet version)
Instructions
Preheat oven to 350°F. Grease and line a loaf pan with parchment paper.
Add cottage cheese, eggs, oats, olive oil, and honey to a blender.
Blend until mostly smooth.
Add baking powder, baking soda, salt, and optional seasoning. Pulse briefly to combine.
Pour batter into the prepared loaf pan and smooth the top.
Bake for 40–45 minutes until golden brown and a toothpick inserted in the center comes out clean.
Let cool completely before slicing for the best texture.
Store in the refrigerator or freeze slices for easy meal prep.
