Ground Beef Zucchini Bake (Low Carb)

Heat olive oil in a large skillet over medium-high heat.

Add the diced onion and sauté for 3 to 4 minutes until softened. Stir in the minced garlic and cook for an additional 30 seconds until fragrant.

Add the ground beef and cook until browned, breaking it apart with a spoon as it cooks. This should take about 6 to 8 minutes.

Drain any excess grease if necessary.

Step 3: Make the Sauce

Reduce the heat to medium.

Add crushed tomatoes, tomato paste, Italian seasoning, paprika, salt, black pepper, and red pepper flakes if using.

Stir everything together and allow the mixture to simmer for 8 to 10 minutes. The sauce should thicken slightly and develop a rich flavor.

Remove from heat.

Step 4: Assemble the Bake

Preheat your oven to 375°F (190°C).

Lightly grease a 9×13-inch baking dish.

Spread a thin layer of the beef mixture on the bottom of the dish.

Arrange half of the zucchini slices over the beef.

Top with half of the remaining beef mixture.

Sprinkle with half of the mozzarella cheese.

Repeat with the remaining zucchini, beef mixture, and mozzarella cheese.

Finish by sprinkling Parmesan cheese evenly over the top.
