For the Lamb & Vegetables
2 Large lamb shanks
2 tbsp Olive oil
1 large Yellow onion, finely chopped
3 cloves Garlic, minced
1 cup Carrots, cut into thick chunks
1 cup Baby potatoes, left whole
1 can (400g) Crushed tomatoes
2 tbsp Tomato paste
2 cups Beef broth (or water)
1 Cinnamon stick
2-3 Whole allspice berries (optional, for authentic Greek flavor)
A few sprigs of fresh thyme or rosemary
Salt and black pepper to taste
For the Orzo
1 cup Orzo pasta
2 cups Boiling water or broth
1 tbsp Butter or olive oil
