Grab-and-Go Keto Breakfast Muffins 🧁🥓
meal prep these once and you’ve got breakfast handled for the whole week… pop them in the microwave and you’re out the door in 2 minutes flat
🌶️ Ingredients:
8 eggs
6 strips bacon, cooked and crumbled
½ cup shredded cheddar cheese
2 tbsp cream cheese, softened
¼ cup diced red bell pepper
½ tsp garlic powder
salt & pepper to taste
💁 Instructions:
1️⃣ Preheat oven to 375°F and grease a 12-cup muffin tin really well with butter or cooking spray
2️⃣ Whisk eggs, cream cheese, garlic powder, salt and pepper together until smooth
3️⃣ Stir in the crumbled bacon, cheddar and bell pepper
4️⃣ Pour the mixture evenly into the muffin cups, filling about ¾ of the way up
5️⃣ Bake 18–20 min until the centers are set and the tops are lightly golden
6️⃣ Let cool 5 min before popping them out, they’ll release easier

Silicone muffin pans are a game changer — nothing sticks
Swap bell pepper for diced jalapeño or baby spinach
Store in the fridge up to 5 days, microwave 45 seconds and go
