Start by finding a medium sized mixing bowl and crack all four of your eggs into it while making sure no tiny pieces of shell fall into the mixture.
Use a whisk or a large fork to beat the eggs vigorously until the yolks and whites are completely combined and the mixture looks a bit frothy on top.
Slowly add in your coconut flour and your vanilla protein powder while continuing to whisk so that you do not get any large clumps of dry ingredients in your batter.

Pour in the almond milk and the vanilla extract then stir everything together until the liquid is smooth and has a creamy consistency like a thick pancake batter.
Add your cinnamon and the sweetener along with that small pinch of sea salt and give it one final good mix to ensure the spices are distributed evenly throughout.
Let the batter sit on the counter for about five minutes because coconut flour absorbs liquid over time and this will help the mixture thicken up into the right shape.
While the batter is resting place a large non stick frying pan or a flat griddle over medium heat on your stove and let it get nice and warm.
Add a small amount of butter or coconut oil to the pan and move it around until the entire surface is coated and starting to sizzle very lightly.
Use a large spoon or a measuring cup to pour the batter onto the hot pan in the shape of small squares or circles that look like slices of bread.
Do not try to make them too large at first because smaller slices are much easier to flip over without breaking the delicate structure of the egg base.
Let the slices cook for about three to four minutes on the first side until you see small bubbles forming on the top and the edges look firm and golden.
Carefully slide a flat spatula under each slice and flip it over with a quick motion to cook the other side for another two or three minutes.
Once both sides are a beautiful dark golden brown and the center feels firm when you press it lightly remove them from the pan and place them on a warm plate.
Repeat the process with the remaining batter until you have a tall and impressive stack of French toast ready to be decorated with your favorite treats.
Finish your masterpiece by adding a handful of fresh blueberries or strawberries and a drizzle of your favorite syrup before serving it warm to your hungry guests.
