Ingredients:
8 all-beef hot dogs
8 soft hot dog buns, lightly toasted
For the Firecracker Sauce:
1/4 cup mayonnaise
2 tablespoons sriracha sauce
1 tablespoon honey
1 teaspoon smoked paprika
1 teaspoon garlic powder
1 tablespoon fresh lime juice
For the Toppings:
1 cup shredded sharp cheddar cheese (or pepper jack)
1/2 cup diced red onions
1/2 cup sliced jalapeños (optional)
Fresh cilantro leaves
Instructions:
In a small bowl, whisk together mayonnaise, sriracha, honey, smoked paprika, garlic powder, and lime juice until smooth.
Prepare toppings by dicing onions, slicing jalapeños, shredding cheese, and chopping cilantro.
Preheat grill to medium-high heat (about 400°F).
Grill hot dogs for 5–7 minutes, turning occasionally until heated through and lightly charred.
Toast buns on the grill during the last 2 minutes until lightly golden.
Spread firecracker sauce inside each bun.
Add grilled hot dog, then top with cheese, onions, jalapeños, and cilantro.
Drizzle extra sauce on top if desired and serve immediately.
