Better Than Takeout Peanut Chicken Made At Home

Yields: 4 servings
Prep time: 15 minutes
Cook time: 20 minutes

What You’ll Need:

1 lb boneless, skinless chicken breasts or thighs, cut into bite-sized pieces
1 tablespoon vegetable oil or other cooking oil
1 medium onion, chopped
2 cloves garlic, minced
1/2 cup smooth peanut butter (no sugar added if you prefer)
1/4 cup low-sodium soy sauce (or tamari for gluten-free)
2 tablespoons honey or maple syrup
1 tablespoon rice vinegar
1/4 cup warm water (plus more if needed for thinner sauce)
1 teaspoon grated fresh ginger (or 1/2 teaspoon ground ginger)
Optional: Red pepper flakes for a little kick, chopped peanuts and sliced green onions for garnish.

1 Cook the Chicken:

Heat the vegetable oil in a large skillet or wok over medium-high heat. Add the chicken pieces and cook until browned and cooked through. Remove the chicken from the skillet and set aside.

2. Sauté the Aromatics:

In the same skillet, add the chopped onion and cook until softened, about 3-5 minutes. Add the minced garlic and grated ginger and cook for another minute until fragrant. Be careful not to burn the garlic!
