Prepare the Cheese: If you are using string cheese simply unwrap all the pieces and set them on a clean plate. If you have a block of cheese use a sharp knife to cut it into sticks that are about 3 inches long and 1 half inch thick so they all cook at the same speed.

Set Up Your Coating Station: You will need three separate shallow bowls to make the coating process easy and organized. In the first bowl place your flour. In the second bowl crack the eggs and whisk them with a fork until the whites and yolks are fully blended. In the third bowl mix the breadcrumbs with the Italian seasoning garlic powder onion powder salt and pepper.

The First Coating: Take one cheese stick and roll it in the flour until it is completely white and covered. Shake off any extra flour so the coating is thin and even.

The Egg Wash: Dip the floured cheese stick into the bowl of beaten eggs. Make sure every part of the stick is wet because the egg acts like glue for the next step.

The Breadcrumb Layer: Place the wet cheese stick into the bowl of seasoned breadcrumbs. Use your clean hand to press the crumbs onto the cheese so they stick firmly.

The Double Dip Secret: For the best results and to prevent the cheese from leaking out dip the breaded stick back into the egg wash and then back into the breadcrumbs one more time. This double layer of protection is what makes them extra crispy and keeps the cheese inside where it belongs.

The Freezing Step: This is the most important part of the whole recipe. Place all your coated cheese sticks on a tray and put them in the freezer for at least 2 hours. If the cheese is frozen when it hits the oil the outside will get crispy before the inside melts too much and escapes through the crust.

Heat the Oil: Pour your oil into a deep pan or a heavy pot. Turn the heat to medium and wait until the oil reaches about 350 degrees. If you do not have a thermometer you can drop a few breadcrumbs into the oil and if they sizzle immediately the oil is ready.

Fry the Cheese: Carefully lower 3 or 4 cheese sticks into the hot oil using a slotted spoon. Do not crowd the pan or the temperature will drop too much. Fry them for only 1 or 2 minutes until they turn a beautiful golden brown color.

Drain and Serve: Remove the sticks from the oil and place them on a plate lined with paper towels to soak up any extra grease. Let them cool for just a minute so you do not burn your mouth then serve them with warm marinara sauce.
