Cheesy Pepperoni Cottage Cheese Pizza Crust

Ingredients (makes about 1 crust):
2 cups cottage cheese
1 cup almond flour
1 cup shredded mozzarella cheese
1/2 cup grated Parmesan cheese
1/2 cup finely chopped pepperoni
2 large eggs
1 tsp Italian seasoning
1/2 tsp garlic powder
1/4 tsp salt
Step 1: Preheat & Prepare
Preheat oven to 375°F (190°C). Line a 12-inch pizza pan or baking sheet with parchment paper.
Step 2: Blend Wet Ingredients
In a blender or food processor, combine cottage cheese and eggs until smooth and creamy.
Step 3: Mix Dough
In a large bowl, mix blended cottage cheese mixture with almond flour, mozzarella, Parmesan, pepperoni, Italian seasoning, garlic powder, and salt until a thick dough forms.
Step 4: Shape & Bake
Spread dough evenly into a 12-inch circle on the prepared pan, about 1/4-inch thick. Bake for 20-25 minutes until golden and firm. Add toppings and bake 5-10 more minutes if desired.
