Buckeye Brownie Cookie Bars

Brownie Base

  • 200g dark chocolate
  • 150g butter
  • 200g sugar
  • 3 large eggs
  • 1 tsp vanilla extract
  • 120g flour
  • 30g cocoa powder
  • 1/2 tsp salt

Peanut Butter Layer

  • 250g creamy peanut butter
  • 100g butter (softened)
  • 200g powdered sugar
  • 1 tsp vanilla extract

Chocolate Topping

  • 200g chocolate
  • 2 tbsp butter or 100ml heavy cream

1. Make the Brownie Base

  1. Preheat oven to 180°C.
  2. Melt chocolate and butter until smooth.
  3. Whisk in sugar, then add eggs one at a time.
  4. Stir in vanilla.
  5. Fold in flour, cocoa powder, and salt.
  6. Pour into a lined baking pan.
  7. Bake for 25–30 minutes.
  8. Let cool completely.

2. Prepare the Peanut Butter Layer

  1. Beat peanut butter and butter until creamy.
  2. Add powdered sugar and vanilla.
  3. Mix until thick and smooth.
  4. Spread evenly over cooled brownie base.

3. Add Chocolate Topping

  1. Melt chocolate with butter or cream.
  2. Stir until smooth and glossy.
  3. Pour over peanut butter layer and spread evenly.

4. Chill and Slice

  1. Refrigerate for 1–2 hours until set.
  2. Cut into bars using a warm knife.
