Carefully fold one-third of the whipped egg whites into the cottage cheese mixture.
This lightens the batter and makes it easier to incorporate the remaining whites.
Gently fold in the remaining egg whites using slow, sweeping motions. Avoid overmixing, as this can deflate the air bubbles responsible for the bread’s fluffy texture.

Step 5: Add the Blueberries
Gently fold the blueberries into the batter.
Try not to crush them while mixing to maintain beautiful pockets of fruit throughout the bread.
Step 6: Shape the Bread
Transfer the mixture onto the prepared baking sheet or into the loaf pan.
Spread evenly using a spatula.
The batter will appear light and airy.
Step 7: Bake
Bake at 300°F (150°C) for 25–30 minutes.
The bread is ready when:
- The top is lightly golden
- The center feels set
- A toothpick inserted into the middle comes out mostly clean
Avoid opening the oven during the first 20 minutes of baking, as sudden temperature changes may cause the bread to collapse.
Step 8: Cool Completely
Remove from the oven and allow the cloud bread to cool in the pan for 10–15 minutes.
Transfer to a cooling rack and cool completely before slicing.
The bread will naturally settle slightly as it cools, which is completely normal.
