Preheat your oven to 300°F (150°C).
Line a baking sheet or loaf pan with parchment paper to prevent sticking and ensure easy removal after baking.
Step 2: Prepare the Cottage Cheese Mixture
In a large mixing bowl, combine:

- Cottage cheese
- Egg yolks
- Honey or maple syrup
- Vanilla extract
Whisk until the mixture becomes smooth and creamy. If you prefer a completely smooth texture, blend the cottage cheese before mixing.
Add the baking powder and stir until fully incorporated.
Step 3: Whip the Egg Whites
Place the egg whites into a clean, grease-free bowl.
Add:
- Cream of tartar
- Pinch of salt
Using an electric mixer, beat on high speed for approximately 4–5 minutes until stiff peaks form.
The egg whites should hold their shape when the beaters are lifted.
