Ingredients
For the Stuffing
100 g cream cheese, softened

2 tbsp powdered sugar
½ tsp vanilla extract
½ cup fresh blueberries
For the French Toast
4 thick slices of brioche or sandwich bread
2 eggs
½ cup milk
1 tsp vanilla extract
1 tsp cinnamon
1 tbsp butter (for cooking)
Toppings
Maple syrup or honey
Extra blueberries
Powdered sugar
Whipped cream
Instructions
Prepare the cheesecake filling
In a bowl, mix cream cheese, powdered sugar, and vanilla until smooth.
Fold in blueberries gently.
Stuff the bread
Spread a generous layer of cheesecake filling between two slices of bread to make a sandwich.
Press gently so it sticks together.
Make the custard
In a shallow bowl, whisk eggs, milk, vanilla, and cinnamon until smooth.
Cook the French toast
Heat butter in a non-stick pan over medium heat.
Dip each stuffed sandwich into the egg mixture, coating both sides.
Cook 3–4 minutes per side until golden brown and slightly crispy.
Serve
Slice diagonally and top with extra blueberries, maple syrup, or powdered sugar.
Serve warm.
