Step 1: Prepare the Oven and Donut Pan

Preheat your oven to 350°F (175°C). Lightly grease a donut pan with nonstick cooking spray or butter to prevent sticking.
Properly greasing the pan is important because cake donuts are delicate when warm and can break apart if the pan is not prepared correctly.
Step 2: Mix the Dry Ingredients
In a large mixing bowl, whisk together:

- Flour
- Sugar
- Baking powder
- Baking soda
- Salt
- Cinnamon
Mixing the dry ingredients first helps evenly distribute the leavening agents, ensuring the donuts rise properly during baking.
Step 3: Combine the Wet Ingredients
In a separate medium bowl, whisk together:
- Eggs
- Buttermilk
- Melted butter
- Vanilla extract
Whisk until the mixture becomes smooth and fully combined.
The buttermilk gives these donuts a rich flavor and soft texture, while melted butter adds moisture and depth.
Step 4: Fold the Batter Together
Slowly pour the wet ingredients into the bowl of dry ingredients. Use a rubber spatula to gently fold the mixture together until no large streaks of flour remain.
Do not overmix the batter. Overmixing can make the donuts dense instead of soft and fluffy.
Step 5: Prepare the Blueberries
Toss the blueberries with 1 tablespoon of flour before adding them to the batter. This helps prevent the berries from sinking to the bottom during baking.
Carefully fold the blueberries into the batter.
If using frozen blueberries, do not thaw them first because thawing can release too much moisture and turn the batter purple.
Step 6: Fill the Donut Pan
Transfer the batter into a piping bag or large zip-top bag with one corner cut off. Pipe the batter evenly into the donut cavities, filling each about ¾ full.
Using a piping bag makes the process cleaner and helps create evenly shaped donuts.
Step 7: Bake the Donuts
Place the donut pan in the preheated oven and bake for 13 to 15 minutes, or until the tops spring back lightly when touched.
You can also insert a toothpick into a donut to check for doneness. If it comes out clean, the donuts are ready.
Avoid overbaking, as this can dry out the donuts.
Step 8: Cool the Donuts
Allow the donuts to cool in the pan for about 5 minutes before transferring them to a wire rack.
Let them cool completely before glazing. Warm donuts can cause the glaze to melt and slide off.
Making the Vanilla Glaze
In a medium bowl, whisk together:
- Powdered sugar
- Milk
- Vanilla extract
Start with 2 tablespoons of milk and add more if needed to achieve a smooth, pourable consistency.
Dip the tops of the cooled donuts into the glaze and place them back on the wire rack. Allow the glaze to set for about 10 minutes before serving.
For extra decoration, sprinkle a few crushed freeze-dried blueberries or lemon zest on top.
