Cottage Cheese Turkey Pepper Stuffed Sweet Potatoes

Ingredients:
β€’ 4 medium sweet potatoes
β€’ 1 pound ground turkey
β€’ 1 tablespoon olive oil
β€’ 1 red bell pepper, diced
β€’ 1 green bell pepper, diced
β€’ 1 small onion, diced
β€’ 1 teaspoon paprika
β€’ 1/2 teaspoon black pepper
β€’ 1/2 teaspoon salt
β€’ 3/4 cup cottage cheese
β€’ 1/2 cup shredded mozzarella
β€’ 2 tablespoons chopped parsley

Methods:

Heat oven to 400 F and bake the sweet potatoes for 40 to 50 minutes until very tender when pierced with a knife.
While they bake, heat the olive oil in a skillet over medium high heat and cook the ground turkey until browned and fully cooked.
Add the peppers and onion and cook for 5 to 6 minutes until softened and glossy, then season with paprika, black pepper, and salt.
Lower the heat and fold in the cottage cheese and half the mozzarella until the mixture becomes creamy and thick.
Slice the baked sweet potatoes open and fluff the insides lightly with a fork to create room for the filling.
Spoon the turkey pepper mixture generously over each sweet potato and top with the remaining mozzarella.
Return to the oven for 5 minutes until the cheese melts, then finish with parsley. They come out soft, savory, and packed with creamy pepper comfort in every bite.
