Carrot Cake Banana Cottage Cheese Surprise Center Muffins
I baked these when I wanted the soft comfort of your banana breakfast bakes, but in a muffin shape with a little extra fun inside. Banana keeps the crumb tender, the carrot melts right into the batter, and the cottage cheese center stays creamy and lovely after baking. They are warm, filling, and feel a little special when you break one open.
Ingredients:
1 ripe banana, mashed
2 eggs
1/4 cup honey
1 cup oats
3/4 cup flour
1 tsp baking powder
1/2 cup finely grated carrot
1 tsp cinnamon
3/4 cup cottage cheese
Methods:
Heat oven to 350 F and grease or line a muffin pan.
Whisk banana, eggs, and honey until smooth.
Stir in oats, flour, baking powder, cinnamon, and grated carrot until evenly combined.
Spoon a little batter into each muffin cup to make a base layer.
Add a small spoonful of cottage cheese to the center of each one.
Cover with the remaining batter so the centers stay hidden.
Bake 18 to 22 minutes until lightly golden and set.
Cool a few minutes before serving warm.
