Crispy Smashed Potatoes with Whipped Feta and Hot Honey Drizzle
Ingredients
For the Potatoes
1 lb (450 g) baby potatoes
2 tbsp olive oil
½ tsp salt
¼ tsp black pepper
For the Whipped Feta
1 cup (200 g) feta cheese
¼ cup (60 g) Greek yogurt
1 tbsp olive oil
For the Hot Honey
2 tbsp honey
1 tsp chili flakes
Garnish
Fresh parsley or dill
Directions
Preheat oven to 425°F (220°C).
Boil potatoes for 12–15 minutes until fork-tender, then drain.
Place on a baking sheet and gently smash each potato.
Drizzle with olive oil, salt, and black pepper.
Roast for 20–25 minutes until crispy and golden.
In a blender or bowl, mix feta, Greek yogurt, and olive oil until smooth.
In a small bowl, mix honey and chili flakes.
Serve potatoes topped with whipped feta and drizzle with hot honey.
Garnish with fresh herbs and serve warm.
