Cottage Cheese Chai Spice Muffins

Ingredients (makes about 12 muffins):
2 cups cottage cheese
2 cups oat flour
2 large eggs
1/4 cup maple syrup
2 tsp chai spice blend (cinnamon, ginger, cardamom, cloves, black pepper)
1 tsp vanilla extract
1 tsp baking powder
1/4 tsp salt
Step 1: Preheat & Prepare
Preheat oven to 350°F (175°C). Line a 12-cup muffin tin with paper liners or grease well.
Step 2: Blend Wet Ingredients
In a blender or food processor, combine cottage cheese, eggs, maple syrup, and vanilla extract. Blend until smooth and creamy.
Step 3: Mix Dry Ingredients & Combine
In a large bowl, whisk oat flour, chai spice, baking powder, and salt. Pour in the wet mixture and stir until just combined, avoiding overmixing.
Step 4: Fill & Bake
Divide batter evenly into muffin cups. Bake for 22-25 minutes, or until tops are golden and a toothpick inserted comes out clean. Cool in tin for 5 minutes, then transfer to a rack.
