This maple Dijon chicken is wonderful spooned over fluffy white or brown rice, mashed potatoes, or buttered egg noodles so all that sweet-tangy sauce has something to soak into. For a simple plate, pair it with steamed green beans or a quick side salad with a light vinaigrette to balance the richness. If you’re feeding a crowd, add some dinner rolls or cornbread so the kids can mop up the extra sauce. On busy nights, I’ll serve it with microwave-steamed veggies and a bagged salad, and on weekends I might roast some carrots or Brussels sprouts in the oven while the chicken finishes in the slow cooker.
