Double Chocolate Banana Cottage Cheese Muffins

Ingredients (makes about 12 muffins):
2 cups cottage cheese
2 ripe bananas, mashed
1/2 cup cocoa powder
1/2 cup oat flour
1/3 cup maple syrup
2 eggs
1 tsp vanilla extract
1 tsp baking powder
1/4 tsp salt
1/2 cup dark chocolate chips
Step 1: Preheat & Mash
Preheat oven to 350°F (175°C). Line a 12-cup muffin tin with liners or grease well. Mash bananas in a large bowl.
Step 2: Blend Wet Ingredients
Add cottage cheese, eggs, maple syrup, and vanilla to the bananas. Blend until smooth using a blender or immersion blender.
Step 3: Mix Dry & Combine
Stir in cocoa powder, oat flour, baking powder, and salt until just combined. Fold in dark chocolate chips.
Step 4: Fill & Bake
Divide batter evenly into muffin cups. Bake for 18-22 minutes, or until a toothpick inserted comes out clean.
