Lazy” Pistachio Protein Bars

Ugh, have you seen the price of keto protein bars lately? $4 for one bar that tastes like chalk? No thanks! 🙄 My 15-Minute “Lazy” Pistachio Protein Bars are salty, chewy, and actually keep you full without that weird artificial aftertaste.
Ingredients
✔️ 1 cup Shelled Pistachios (salted)
✔️ 1/2 cup Vanilla Keto Protein Powder (Isopure or similar)
✔️ 1/4 cup Almond Flour
✔️ 1/4 cup Melted Coconut Oil
✔️ 2 tbsp Sugar-free Maple Syrup (Lakanto)
✔️ 1/2 tsp Almond extract
💁Step-by-Step Instructions
1️⃣ Toss the pistachios in a food processor or blender and pulse until they’re roughly chopped—don’t turn them into dust, we want that crunch!
2️⃣ In a medium bowl, mix the protein powder, almond flour, and chopped nuts together.
3️⃣ Pour in the melted coconut oil, syrup, and almond extract. Stir until it forms a thick, slightly sticky dough.
4️⃣ Line a small container with parchment paper and press the mixture down firmly into a flat square (about 1 inch thick).
5️⃣ Pop it in the freezer for 10 mins to set. Slice into 4 chunky bars and you’re done!
☑️Quick Tips
* Store these in the fridge! Since they use coconut oil, they’ll get soft if they sit on a hot counter.
* Drizzle with a little melted sugar-free dark chocolate if you’re feeling extra.
