Ingredients:

* 2 lbs pork shoulder (boneless)
* 1 tablespoon olive oil
* 1 teaspoon salt
* 1 teaspoon black pepper
* 1 teaspoon cumin
* 1 teaspoon chili powder
* 1 teaspoon smoked paprika
* 4 cloves garlic, minced
* 1 cup orange juice
* 1/2 cup chicken broth
* 1 tablespoon lime juice
* 4 bolillo rolls or sandwich rolls
* 1 avocado, sliced
* 1/2 cup refried beans
* 1/2 cup shredded lettuce
* 1/2 cup sliced tomatoes
* 1/4 cup pickled jalapeños
* 1/4 cup mayonnaise
* 2 tablespoons chopped fresh cilantro

Instructions:

1. Rub the pork shoulder with salt, pepper, cumin, chili powder, and smoked paprika.
2. Heat olive oil in a pan over medium-high heat and sear the pork on all sides until browned.
3. Transfer the pork to a slow cooker and add garlic, orange juice, chicken broth, and lime juice.
4. Cover and cook on low for 6 hours until the pork is tender and easily shredded.
5. Remove the pork and shred it using two forks, then return it to the juices and mix well.
6. Slice and lightly toast the bolillo rolls.
7. Spread refried beans on the bottom half of each roll, then layer with pulled pork, avocado slices, lettuce, tomatoes, and jalapeños.
8. Spread mayonnaise on the top half of the roll and sprinkle with fresh cilantro.
9. Close the sandwich, press gently, and serve warm.
